Asian Chicken slaw
six cups shredded Chinese cabbage
two carrots, shredded lenghtways
one cup roasted unsalted cashews
one quarter cup snipped chives
one cup mint leaves
one cup coriander
two long red chillies, seeds removed, finely sliced
lime and coconut dressing
half a cup coconut milk
one tablespoon fish sauce
two tablespoons lime juice
one tablespoon caster sugar
one// Place the cabbage, carrot, cashews, chives, mint, coriander, chili and chicken in a bowl and toss to combine.
two// To make the lime and coconut dressing, place the coconut milk, fish sauce, lime juice and sugar in a bowl and whisk to combine. Pour the dressing over the salad and toss gently to combine. Divide between plates to serve.
