Quinoa, Edamame and Bean Salad
one cup cooked quinoa
half a cup cooked edamame, pods removed
one capsicum
one cup four bean mix or any preferred cooked bean
large handful flat leaf parsley
drizzle of olive oil
two teaspoons lemon juice
one// Preheat oven to one hundred and eighty degrees and bake capsicum for fifteen minutes or until skin softens. Remove and slice capsicum into one inch stripes.
two// Combine quinoa, capsicum, edamame, bean mix and parsley. Drizzle salad with olive oil and lemon juice.
*NB: Edamame may be replaced with broad beans.
